15-Minute Gochujang Honey Noodles

Chewy udon tossed in a glossy gochujang-honey-soy sauce with charred scallions. One pan, fifteen minutes, and a 2:2:1 sauce ratio worth memorizing.

Ingredients
  

  • 2 blocks frozen sanuki udon about 14 oz / 400 g; or 7 oz (200 g) dried udon, soba, or linguine
  • 2 Tbsp gochujang
  • 2 Tbsp honey or maple syrup
  • 1 Tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 2 cloves garlic grated
  • 4 scallions cut into 2-inch lengths
  • 1 Tbsp neutral oil
  • toasted sesame seeds to finish
  • 2 soft-boiled eggs optional

Method
 

  1. Bring a pot of water to a boil. Cook the noodles — about 2 minutes for frozen udon, or according to the package for dried. Before draining, scoop out ½ cup of the cooking water and set it aside.
  2. While the water heats, whisk the gochujang, honey, soy sauce, sesame oil, vinegar, and garlic in a small bowl. Loosen with 3 Tbsp of the noodle water until it pours like a thick glaze.
  3. Heat the neutral oil in a wide skillet over high heat. Add the scallions and let them char undisturbed for about 2 minutes, until blistered in spots. Remove to a plate.
  4. Turn the heat to low. Pour in the sauce and let it bubble for 30 seconds, then add the drained noodles. Toss for about 1 minute, adding more noodle water a tablespoon at a time, until every strand is glossy and coated.
  5. Divide between two bowls. Top with the charred scallions, sesame seeds, and egg halves if using.

Notes

The sauce keeps in a jar in the fridge for about two weeks. Kid-friendly version: use 1 Tbsp gochujang and stir 1 Tbsp peanut butter into the sauce.
