  • 4 preserved lemons (80g / 3oz), quartered and pulp removed
  • 150g (5oz / 1 cup) green olives, pitted
  • 60ml (2fl oz / 1/4 cup) extra virgin olive oil
  • 3 cloves garlic (15g / 0.5oz), minced
  • 2 tsp ground ginger
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1/2 tsp ground saffron threads
  • 1/2 tsp ground black pepper
  • 1 tsp sea salt
  • 500ml (17fl oz / 2 cups) chicken stock
  • 30g (1oz / 1/4 cup) fresh cilantro, chopped
  • 30g (1oz / 1/4 cup) fresh parsley, chopped
  • 2 tbsp fresh lemon juice

Instructions

  1. Step 1: Season chicken pieces generously with salt, pepper, ginger, turmeric, and cinnamon. Let marinate at room temperature for 20 minutes while preparing other ingredients.
  2. Step 2: If using a clay tagine, soak the base and lid in cold water for 20 minutes. If using a heavy-bottomed pot, skip this step.
  3. Step 3: Heat olive oil in the tagine base or heavy pot over medium heat. Brown chicken pieces skin-side down for 5-6 minutes until golden, then flip and brown other side for 4-5 minutes.
  4. Step 4: Remove chicken and set aside. In the same pot, sauté sliced onions until softened and translucent, about 8-10 minutes, stirring occasionally.
  5. Step 5: Add minced garlic and saffron to the onions, cooking for another 2 minutes until fragrant.
  6. Step 6: Return chicken pieces to the pot, nestling them among the onions. Add preserved lemon quarters and green olives around the chicken.

  8. Step 8: Cover with tagine lid or tight-fitting lid, reduce heat to low, and simmer gently for 1 hour and 15 minutes.
  9. Step 9: Check liquid levels after 45 minutes – add more stock if needed to prevent sticking, but maintain low liquid level for concentrated flavors.
  10. Step 10: In the final 10 minutes, sprinkle fresh cilantro and parsley over the dish, keeping lid slightly ajar.
  11. Step 11: Remove from heat and let rest for 5 minutes. Drizzle with fresh lemon juice before serving.
  12. Step 12: Serve directly from the tagine with warm flatbread or over fluffy couscous, ensuring each portion includes chicken, preserved lemons, and olives.
