Cook Time: 15 minutes

Ingredients

  • 680g (1.5 lbs) salmon fillets, skin removed, cut into 4 portions
  • 500g (1 lb 2oz / 4 cups) cauliflower florets
  • 120ml (4 fl oz / ½ cup) heavy cream
  • 60g (2oz / 4 tbsp) unsalted butter
  • 30ml (1 fl oz / 2 tbsp) olive oil
  • 4 garlic cloves, minced
  • 30g (1oz / ¼ cup) fresh parmesan cheese, grated
  • 15ml (½ fl oz / 1 tbsp) fresh lemon juice
  • 15g (½oz / 2 tbsp) fresh parsley, chopped
  • 5g (1 tsp) dried thyme
  • 2.5g (½ tsp) paprika
  • 2.5g (½ tsp) sea salt
  • 1.25g (¼ tsp) black pepper
  • 1.25g (¼ tsp) red pepper flakes (optional)

Instructions

  1. Step 1: Season salmon fillets evenly with salt, pepper, and paprika. Let rest at room temperature for 5 minutes while preparing other ingredients.
  2. Step 2: Pulse cauliflower florets in a food processor until they resemble rice-sized granules. Alternatively, grate using a box grater.
  3. Step 3: Heat olive oil in a large non-stick skillet over medium-high heat. Once shimmering, add salmon fillets presentation-side down.
  4. Step 4: Cook salmon undisturbed for 4-5 minutes until golden crust forms. Flip carefully and cook another 3-4 minutes until internal temperature reaches 145°F (63°C). Remove and set aside.
  5. Step 5: In the same skillet, reduce heat to medium and add 2 tablespoons butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
  6. Step 6: Add cauliflower rice to the skillet, season with thyme, salt, and pepper. Sauté for 4-5 minutes, stirring occasionally, until tender but not mushy.
  7. Step 7: Push cauliflower to one side of the skillet. Add remaining butter to empty space and let melt.
  8. Step 8: Pour heavy cream into the melted butter area, then gradually incorporate with cauliflower rice, creating a creamy mixture.
  9. Step 9: Add grated parmesan cheese and red pepper flakes (if using). Stir gently until cheese melts and sauce becomes smooth and glossy.
  10. Step 10: Return salmon fillets to the skillet, nestling them into the creamy cauliflower rice.
  11. Step 11: Drizzle fresh lemon juice over the salmon and sprinkle with chopped parsley.
  12. Step 12: Remove from heat and let rest for 2 minutes before serving to allow flavors to meld together perfectly.

Chef’s Tips

  • Pat salmon completely dry before seasoning and cooking to achieve that perfect golden crust – moisture is the enemy of proper searing.
  • Don’t overcook the cauliflower rice; it should retain a slight bite similar to al dente rice. Overcooked cauliflower becomes mushy and releases excess water.
  • Use room temperature heavy cream to prevent the sauce from breaking when added to the hot pan, and always add it gradually while stirring continuously.

Health Benefits

This nutrient-dense meal provides exceptional omega-3 fatty acids from salmon, supporting heart health, brain function, and reducing inflammation throughout the body. The high-quality protein promotes muscle maintenance and satiety, while the healthy fats from butter and olive oil support hormone production and nutrient absorption. Cauliflower delivers essential vitamins C and K, plus fiber for digestive health, while garlic provides powerful antioxidants and immune-boosting compounds that fight oxidative stress and support cardiovascular wellness.

Storage Instructions

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of cream if needed to restore creaminess. For meal prep, store salmon and cauliflower rice in separate containers to maintain optimal texture. Freeze portions for up to 2 months, though fresh preparation is recommended for best flavor and texture.
