- 240ml (1 cup) low-sodium chicken broth
- 200g (7oz / 1 cup) canned chickpeas, drained and rinsed
- 150g (5.3oz / 1 cup) cherry tomatoes, halved
- 100g (3.5oz / 3/4 cup) cucumber, diced
- 60g (2oz / 1/2 cup) red onion, finely diced
- 60g (2oz / 1/2 cup) crumbled feta cheese
- 30ml (2 tbsp) extra virgin olive oil
- 15ml (1 tbsp) fresh lemon juice
- 30g (1oz / 1/4 cup) fresh parsley, chopped
- 15g (0.5oz / 2 tbsp) fresh dill, chopped
- 2 cloves garlic, minced
- 5ml (1 tsp) dried oregano
- 2.5ml (1/2 tsp) smoked paprika
- 1.25ml (1/4 tsp) sea salt
- 1.25ml (1/4 tsp) black pepper
Instructions
- Rinse quinoa under cold water until water runs clear. In a medium saucepan, bring chicken broth to a boil, add quinoa, reduce heat to low, cover and simmer for 15 minutes until liquid is absorbed.
- While quinoa cooks, season diced chicken breast with half the salt, pepper, and smoked paprika. Heat a large skillet over medium-high heat.
- Add 5ml (1 tsp) olive oil to the hot skillet. Cook seasoned chicken for 6-8 minutes, stirring occasionally, until golden brown and internal temperature reaches 74°C (165°F).
- Remove chicken from heat and let rest for 3 minutes. Meanwhile, drain and rinse chickpeas, then pat dry with paper towels.
- In the same skillet, add chickpeas and cook for 3-4 minutes until slightly crispy. Season with oregano and remaining smoked paprika.
- Fluff cooked quinoa with a fork and let cool for 5 minutes. Transfer to a large mixing bowl.
- Prepare the dressing by whisking together remaining olive oil, lemon juice, minced garlic, remaining salt and pepper in a small bowl.
- Add cooked chicken and chickpeas to the quinoa. Pour dressing over the mixture and toss gently to combine.
- Fold in diced cucumber, cherry tomatoes, and red onion. Mix until vegetables are evenly distributed.
- Add fresh parsley and dill to the bowl, tossing gently to incorporate the herbs throughout.
- Divide the quinoa mixture between two serving bowls. Top each portion with crumbled feta cheese.
- Serve immediately while warm, or chill for 30 minutes if preferred cold. Garnish with additional fresh herbs if desired.

Chef’s Tips
- Toast quinoa in a dry pan for 2-3 minutes before adding liquid to enhance its nutty flavor and improve texture.
- Let chicken rest after cooking to retain juices, and slice against the grain if serving in strips rather than diced.
- Make chickpeas extra crispy by patting them completely dry and cooking them in a single layer without overcrowding the pan.
Health Benefits
This nutrient powerhouse delivers complete proteins containing all essential amino acids crucial for muscle synthesis and repair. The combination of quinoa and chickpeas provides sustained energy release while supporting digestive health through high fiber content. Mediterranean ingredients like olive oil and fresh herbs offer powerful antioxidants and anti-inflammatory compounds that support heart health and may reduce chronic disease risk. The balanced macronutrient profile helps stabilize blood sugar levels and promotes satiety, making it ideal for weight management goals.
Storage Instructions
Store leftovers in airtight containers in the refrigerator for up to 4 days. For best texture, store dressing separately and add just before serving. This meal can be enjoyed cold or reheated gently in the microwave for 60-90 seconds. Avoid freezing as the vegetables and feta will lose their texture. If meal prepping, add fresh herbs and feta just before eating to maintain optimal flavor and appearance.
