  • 100g (3.5oz / 3/4 cup) feta cheese, crumbled
  • 60g (2.1oz / 2 cups) fresh spinach leaves
  • 30ml (1fl oz / 2 tbsp) extra virgin olive oil
  • 15ml (0.5fl oz / 1 tbsp) fresh lemon juice
  • 10ml (2 tsp) red wine vinegar
  • 5g (1 tsp) dried oregano
  • 3g (1/2 tsp) garlic powder
  • 2g (1/3 tsp) sea salt
  • 1g (1/4 tsp) black pepper
  • 15g (0.5oz / 2 tbsp) fresh parsley, chopped

Instructions

  1. Step 1: Rinse quinoa thoroughly under cold water using a fine-mesh strainer until water runs clear to remove bitter saponins.
