Ingredients

  • 240g (8.5oz / 1â…“ cups) tri-color quinoa, rinsed
  • 600g (21oz / 4 fillets) wild salmon, skin removed
  • 400g (14oz / 1 can) chickpeas, drained and rinsed
  • 200g (7oz / 1 large) cucumber, diced
  • 300g (10.5oz / 2 cups) cherry tomatoes, halved
  • 150g (5.3oz / 1 large) avocado, sliced
  • 100g (3.5oz / â…” cup) Kalamata olives, pitted
  • 150g (5.3oz / 1 cup) feta cheese, crumbled
  • 60ml (2fl oz / ¼ cup) extra virgin olive oil
  • 45ml (1.5fl oz / 3 tbsp) fresh lemon juice
  • 15g (0.5oz / ¼ cup) fresh dill, chopped
  • 15g (0.5oz / ¼ cup) fresh parsley, chopped
  • 3 cloves garlic, minced
  • 5g (0.2oz / 1 tsp) dried oregano
  • 2.5g (0.1oz / ½ tsp) sea salt
  • 1.25g (0.04oz / ¼ tsp) black pepper

Instructions

  1. Step 1: Rinse quinoa under cold water until water runs clear. In a medium saucepan, combine quinoa with 480ml (16fl oz / 2 cups) water and bring to a boil.
  2. Step 2: Reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Remove from heat and let stand 5 minutes, then fluff with a fork.
  3. Step 3: While quinoa cooks, preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  4. Step 4: Pat salmon fillets dry and season with salt, pepper, and half the oregano. Drizzle with 15ml (1 tbsp) olive oil.
  5. Step 5: Bake salmon for 12-15 minutes until internal temperature reaches 63°C (145°F). Let cool slightly, then flake into large chunks.
  6. Step 6: In a large skillet, heat 15ml (1 tbsp) olive oil over medium heat. Add chickpeas and remaining oregano, cooking for 5 minutes until lightly crispy.
  7. Step 7: In a small bowl, whisk together remaining olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.
  8. Step 8: In a large mixing bowl, combine cooled quinoa with half the dressing and toss gently.
  9. Step 9: Add diced cucumber, halved cherry tomatoes, and warmed chickpeas to the quinoa mixture.
  10. Step 10: Gently fold in fresh dill and parsley, being careful not to overmix.
  11. Step 11: Divide quinoa mixture among 4 bowls. Top each with flaked salmon, avocado slices, olives, and crumbled feta cheese.
  12. Step 12: Drizzle remaining dressing over each bowl and serve immediately, or chill for up to 2 hours before serving.
