  • 150g (5.3oz / 1 cup) cucumber, diced
  • 100g (3.5oz / â…” cup) red onion, thinly sliced
  • 120g (4.2oz / ¾ cup) kalamata olives, pitted and halved
  • 100g (3.5oz / â…” cup) feta cheese, crumbled
  • 60ml (2fl oz / ¼ cup) extra virgin olive oil
  • 30ml (1fl oz / 2 tbsp) fresh lemon juice
  • 15g (0.5oz / 2 tbsp) fresh oregano, chopped
  • 10g (0.35oz / 2 cloves) garlic, minced
  • 5g (1 tsp) dried oregano
  • 3g (½ tsp) sea salt
  • 2g (¼ tsp) black pepper, freshly ground
  • 30g (1oz / 2 tbsp) pine nuts, toasted

Instructions

  1. Step 1: Rinse quinoa under cold water until water runs clear. In a medium saucepan, bring chicken broth to a boil, add quinoa, reduce heat to low, cover and simmer for 15 minutes.
  2. Step 2: While quinoa cooks, season chicken strips with half the salt, pepper, and dried oregano. Let marinate for 5 minutes at room temperature.
  3. Step 3: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken strips and cook for 6-8 minutes, turning once, until golden brown and internal temperature reaches 75°C (165°F).
  4. Step 4: Remove chicken from heat and let rest for 3 minutes, then slice into bite-sized pieces. Cover to keep warm.
  5. Step 5: Remove quinoa from heat and let stand 5 minutes. Fluff with a fork and transfer to a large mixing bowl to cool slightly.
  6. Step 6: In a small bowl, whisk together remaining olive oil, lemon juice, minced garlic, fresh oregano, and remaining salt and pepper to create the dressing.
  7. Step 7: Add cherry tomatoes, cucumber, and red onion to the quinoa. Pour dressing over mixture and toss gently to combine.
  8. Step 8: Divide quinoa mixture among 4 serving bowls. Top each bowl with sliced chicken, ensuring even distribution.
  9. Step 9: Sprinkle crumbled feta cheese and kalamata olives over each bowl.
  10. Step 10: Toast pine nuts in a dry skillet over medium heat for 2-3 minutes until golden. Sprinkle over bowls.
  11. Step 11: Garnish with additional fresh oregano if desired and serve immediately, or chill for 30 minutes for a refreshing cold bowl option.

Chef’s Tips

  • Always rest your quinoa after cooking and fluff with a fork rather than stirring to prevent it from becoming mushy and maintain that perfect, fluffy texture.
  • Pound chicken breasts to even thickness before cutting into strips – this ensures uniform cooking and prevents some pieces from drying out while others remain undercooked.
  • Make the dressing ahead and let it sit for 30 minutes to allow the garlic and herbs to meld together, creating a more complex and flavorful vinaigrette that will elevate the entire dish.

Health Benefits

This Mediterranean quinoa bowl provides complete amino acids from both quinoa and chicken, supporting muscle protein synthesis and recovery. The olive oil delivers heart-healthy monounsaturated fats and vitamin E, while the colorful vegetables provide antioxidants including lycopene from tomatoes and vitamin C from cucumbers. The combination of fiber-rich quinoa and lean protein promotes satiety and stable blood sugar levels, making this an excellent choice for weight management and sustained energy. Additionally, the anti-inflammatory compounds found in olive oil, oregano, and other Mediterranean ingredients support overall cardiovascular health and may help reduce inflammation markers in the body.

Storage Instructions

Store leftovers in airtight containers in the refrigerator for up to 3 days. Keep dressing separate if meal prepping to prevent soggy vegetables. Can be served cold or reheated gently in microwave for 60-90 seconds. For best quality, add fresh herbs and feta just before serving. Cooked quinoa can be frozen for up to 2 months; thaw overnight in refrigerator before using.
