Ingredients

  • 480ml (16fl oz / 2 cups) low-sodium vegetable broth
  • 600g (21oz / 4 fillets) wild-caught salmon, skin removed
  • 30ml (2 tbsp) extra virgin olive oil
  • 15ml (1 tbsp) fresh lemon juice
  • 200g (7oz / 2 cups) baby spinach, chopped
  • 150g (5oz / 1 cup) cherry tomatoes, halved
  • 100g (3.5oz / 1/2 cup) cucumber, diced
  • 80g (3oz / 1/2 cup) red bell pepper, diced
  • 60g (2oz / 1/2 cup) red onion, finely diced
  • 40g (1.4oz / 1/4 cup) hemp hearts
  • 30g (1oz / 1/4 cup) pumpkin seeds
  • 60g (2oz / 1/4 cup) crumbled feta cheese
  • 15g (0.5oz / 2 tbsp) fresh dill, chopped
  • 5g (1 tsp) garlic powder
  • 2.5g (1/2 tsp) smoked paprika
  • 2.5g (1/2 tsp) sea salt
  • 1.25g (1/4 tsp) black pepper

Instructions

  1. Step 1: Preheat your grill or grill pan to medium-high heat. Pat salmon fillets dry with paper towels and season both sides with garlic powder, smoked paprika, salt, and pepper.
  2. Step 2: In a medium saucepan, bring vegetable broth to a boil. Add rinsed quinoa, reduce heat to low, cover and simmer for 15 minutes until liquid is absorbed.
  3. Step 3: While quinoa cooks, brush salmon fillets with 15ml (1 tbsp) olive oil. Grill for 4-5 minutes per side until internal temperature reaches 63°C (145°F).
  4. Step 4: Remove quinoa from heat and let stand covered for 5 minutes. Fluff with a fork and let cool slightly.
  5. Step 5: In a large mixing bowl, combine chopped spinach, cherry tomatoes, cucumber, red bell pepper, and red onion.
  6. Step 6: Add the cooled quinoa to the vegetable mixture and toss gently to combine.
  7. Step 7: In a small bowl, whisk together remaining olive oil, lemon juice, and a pinch of salt to create a light dressing.
  8. Step 8: Drizzle the dressing over the quinoa-vegetable mixture and toss thoroughly.
  9. Step 9: Divide the quinoa mixture evenly among four serving bowls.
