Ingredients

  • 300g (10.5oz / 2 fillets) wild-caught salmon, skin removed
  • 150g (5.3oz / 3/4 cup) tri-color quinoa, rinsed
  • 300ml (10fl oz / 1 1/4 cups) low-sodium vegetable broth
  • 150g (5.3oz / 1 cup) edamame beans, shelled
  • 200g (7oz / 2 cups) baby spinach
  • 150g (5.3oz / 1 medium) avocado, sliced
  • 100g (3.5oz / 3/4 cup) cherry tomatoes, halved
  • 60g (2.1oz / 1/2 cup) cucumber, diced
  • 30ml (1fl oz / 2 tbsp) extra virgin olive oil
  • 15ml (0.5fl oz / 1 tbsp) fresh lemon juice
  • 10g (0.35oz / 2 tsp) fresh dill, chopped
  • 5g (0.18oz / 1 tsp) garlic powder
  • 5g (0.18oz / 1 tsp) smoked paprika
  • 2.5g (0.09oz / 1/2 tsp) sea salt
  • 1.25g (0.04oz / 1/4 tsp) black pepper
  • 15g (0.53oz / 1 tbsp) pumpkin seeds

Instructions

  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Rinse quinoa thoroughly under cold water until water runs clear. In a medium saucepan, bring vegetable broth to a boil.
  3. Add quinoa to boiling broth, reduce heat to low, cover and simmer for 15 minutes until liquid is absorbed. Remove from heat and let stand 5 minutes.
  4. Meanwhile, pat salmon fillets dry with paper towels. Mix garlic powder, smoked paprika, half the salt, and pepper in a small bowl.
  5. Rub salmon with 1 tablespoon olive oil, then season evenly with spice mixture. Place on prepared baking sheet.
  6. Bake salmon for 12-15 minutes until it flakes easily with a fork and reaches internal temperature of 63°C (145°F).
  7. While salmon cooks, bring a small pot of water to boil. Add edamame and cook for 3-4 minutes until tender. Drain and set aside.
  8. Fluff quinoa with a fork and transfer to a large mixing bowl. Add baby spinach and gently toss – the warm quinoa will slightly wilt the spinach.
  9. In a small bowl, whisk together remaining olive oil, lemon juice, fresh dill, and remaining salt to create dressing.
  10. Add cooked edamame, cherry tomatoes, and cucumber to quinoa mixture. Drizzle with half the dressing and toss gently.
  11. Divide quinoa mixture between two bowls. Flake salmon into large chunks and arrange on top of each bowl.
  12. Add sliced avocado, sprinkle with pumpkin seeds, and drizzle with remaining dressing. Serve immediately while warm.
