  • 5g (1 tsp) sugar
  • 3g (1/2 tsp) sea salt
  • 1 cucumber (150g / 5oz), thinly sliced
  • 2 scallions (30g / 1oz), finely chopped
  • 15g (1 tbsp) toasted sesame seeds
  • 1 sheet nori seaweed, cut into strips

Instructions

  1. Step 1: In a small bowl, whisk together white miso paste, mirin, sake, and honey until smooth. This creates your traditional saikyo-miso marinade.
  2. Step 2: Pat salmon fillets completely dry with paper towels. Place in a shallow dish and coat evenly with miso marinade. Cover and refrigerate for 2-4 hours, turning once halfway through.
  3. Step 3: Rinse brown rice under cold water until water runs clear. In a heavy-bottomed saucepan, combine rice and water. Bring to a boil, then reduce heat to lowest setting, cover, and simmer for 45 minutes.
