- 200g (7oz / 1½ cups) cherry tomatoes, halved
- 150g (5.3oz / 1 cup) cucumber, diced
- 100g (3.5oz / â…” cup) red bell pepper, diced
- 60g (2oz / ½ cup) red onion, finely chopped
- 80g (2.8oz / ½ cup) kalamata olives, pitted and halved
- 60g (2oz / ½ cup) feta cheese, crumbled
- 30g (1oz / ¼ cup) fresh parsley, chopped
- 15ml (1 tbsp) olive oil for cooking
- 30ml (2 tbsp) tahini
- 30ml (2 tbsp) fresh lemon juice
- 15ml (1 tbsp) extra virgin olive oil
- 1 clove garlic, minced
- 5ml (1 tsp) dried oregano
- 2.5ml (½ tsp) ground cumin
- Salt and black pepper to taste
Instructions
- Step 1: Rinse quinoa under cold water until water runs clear. In a medium saucepan, combine quinoa with 375ml (1½ cups) water and a pinch of salt. Bring to a boil.
