  • 100g (3.5oz / ½ cup dry) quinoa
  • 200g (7oz / 1½ cups) broccoli florets
  • 150g (5.3oz / 1 cup) cherry tomatoes, halved
  • 100g (3.5oz / ¾ cup) red bell pepper, diced
  • 60g (2.1oz / 2 cups) fresh baby spinach
  • 30ml (2 tbsp) extra virgin olive oil
  • 15ml (1 tbsp) lemon juice
  • 10g (2 tsp) fresh garlic, minced
  • 5g (1 tsp) fresh ginger, grated
  • 2.5g (½ tsp) smoked paprika
  • 2.5g (½ tsp) ground cumin
  • 30g (1oz / ¼ cup) pumpkin seeds
  • 15g (½oz / 2 tbsp) fresh parsley, chopped
  • Salt and black pepper to taste
  • 240ml (1 cup) low-sodium vegetable broth

Instructions

  1. Step 1: Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.
  2. Step 2: Rinse quinoa under cold water until water runs clear. In a medium saucepan, combine quinoa with vegetable broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
  3. Step 3: While quinoa cooks, prepare the vegetables. Toss broccoli florets, cherry tomatoes, and red bell pepper with 15ml (1 tbsp) olive oil, salt, and pepper.
  4. Step 4: Spread seasoned vegetables on the prepared baking sheet and roast for 20 minutes, stirring once halfway through, until vegetables are tender and lightly caramelized.
  5. Step 5: Season salmon fillets with smoked paprika, cumin, salt, and pepper on both sides. Let rest for 5 minutes to absorb flavors.
  6. Step 6: Heat a non-stick skillet over medium-high heat. Add remaining 15ml (1 tbsp) olive oil and cook salmon for 4-5 minutes per side until golden brown and cooked through (internal temperature 63°C/145°F).
  7. Step 7: Remove salmon from heat and let rest for 2 minutes, then flake into large chunks using a fork.
  8. Step 8: In a small bowl, whisk together lemon juice, minced garlic, and grated ginger to create a simple dressing.
  9. Step 9: Fluff the cooked quinoa with a fork and divide between two serving bowls.
  10. Step 10: Arrange fresh spinach over the quinoa, then top with roasted vegetables and flaked salmon.
  11. Step 11: Drizzle the lemon-garlic dressing over each bowl and sprinkle with pumpkin seeds and fresh parsley.
  12. Step 12: Serve immediately while warm, with additional lemon wedges on the side if desired.

Chef’s Tips

  • For perfectly cooked salmon, use the finger test – gently press the center of the fillet. It should feel firm but still have a slight give, indicating it’s cooked through but not overdone.
  • Toast your quinoa in a dry pan for 2-3 minutes before adding liquid to enhance its nutty flavor and improve texture. This simple step makes a remarkable difference in the final dish.
  • Prep the vegetables the night before and store them seasoned in the refrigerator. This cuts your cooking time in half and makes this power bowl perfect for meal prep throughout the week.
