Pumpkin spice season is a minefield for low-carb eaters: the famous coffeehouse latte carries roughly 50 grams of sugar, and the average bakery muffin twice that in total carbs. But pumpkin itself is surprisingly keto-friendly — only about 5 net carbs per half-cup of purée — and the spice blend has zero. The problem was always the sugar. These three recipes fix that.

First, the Spice Blend

Mix and jar: 3 tablespoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons nutmeg, 1 teaspoon allspice, 1 teaspoon ground cloves. This beats pre-mixed blends that sometimes sneak in sugar.

1. Keto Pumpkin Spice Muffins (4 g net carbs)

Whisk dry: 2 cups almond flour, ⅓ cup granulated erythritol-monk fruit sweetener, 1½ teaspoons baking powder, 2 teaspoons pumpkin spice, pinch of salt. Whisk wet: 3 eggs, ¾ cup pumpkin purée (not pie filling), ¼ cup melted butter or coconut oil, 1 teaspoon vanilla. Combine, scoop into 10 lined muffin cups, top with chopped pecans, and bake at 350°F (175°C) for 22–25 minutes. They’re moist enough that no one asks where the wheat went.

2. Actual-Keto Pumpkin Spice Latte (3 g net carbs)

Warm ¾ cup unsweetened almond milk with 2 tablespoons pumpkin purée, ½ teaspoon pumpkin spice, and sweetener to taste. Blend with a double shot of espresso until foamy, then top with 2 tablespoons whipped heavy cream and a cinnamon dusting. Total cost: about a dollar; total sugar: effectively zero.

3. No-Bake Pumpkin Cheesecake Fat Bombs (2 g net carbs)

Beat 8 oz softened cream cheese with ⅓ cup pumpkin purée, ¼ cup powdered sweetener, 1 teaspoon pumpkin spice, and ½ teaspoon vanilla. Roll into 12 balls, coat in chopped toasted pecans, and chill 2 hours. One or two settle an afternoon sweet tooth without the blood-sugar rollercoaster.

Almond Flour Notes for New Keto Bakers

  • Blanched, fine-ground almond flour behaves best; almond meal makes denser, grittier bakes.
  • Don’t overbake — almond flour browns faster than wheat; tent with foil if tops darken early.
  • Cool completely. Keto bakes firm up as they cool; warm, they seem underdone.
  • Storage: refrigerate everything above — almond flour bakes are more perishable than their wheat cousins.
